Can you substitute ground chicken from the grocery, or is it too finely ground?

…we grate it and take the onion juice by hand. We also wash the bell pepper and chop it very finely. We grind the chicken meat with a meat grinder or food processor.

Can you substitute ground chicken from the grocery, or is it too finely ground? It's ground to the consistency of ground pork or beef.
