For me, it's more than that God "does not have a sex." I believe God is more than sex or gender. Those ancient texts are telling us that, I feel. It seems to me Creation itself backs that up. What I mean is that even nature proves the rule that sex and gender are not binary, in both plants and animals.
Plus, the more science learns about it in humans, the more complex and non-binary sex and gender are proving to be. Did you know there are multiple gender assignment events in utero? There is the genitalia assignment – which is far from the cut and dried binary people presume. Yes, sex is usually determined by the X and Y chromosome makeup of the sperm, even though the observable characteristics of sex – genetalia – before 8 weeks is female. In utero, the fetal anatomy transitions either from female to male or continues developing as female.
But, there are also hormonal shifts and assignments, including in brain development of sexual and/or gender differentiation. For example: According to an NIH report, "There is substantial evidence that exposure to androgens prenatally influences children’s sex-typical toy, activity and playmate preferences." And, "Children whose mothers took androgenic progestins during pregnancy show increased male-typical or decreased female-typical behavior, and those whose mothers took anti-androgenic progestins show the opposite outcome." https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3296090/
