I agree! My favorite is Baghali Pelow. But, I've never mastered making it. I have to wait for my husband to make it for me (usually for Nowruz).

This one though, my husband says is better than his sister's — ludicrously high praise indeed from him (she raised him after his mother died). I also make Stamboli, Abgousht, Bademjan, Joojeh, Koobideh, and Barg. I make Bamieh for my husband; I don't touch it because I hate okra. Plus, I make a Mahi Shekam Por.
