I do know that waitstaff prefer cash tips.

As we were wrapping up our meal and about to bid adieu to the culinary paradise, the host — or was he the server? — leaned in. He requested, in a whisper that could hardly mask his unease, that we leave the tip in cash. The reason was as stark as it was unsettling — card tips, it seemed, never made their way into his pocket.

I do know that waitstaff prefer cash tips. But, just keeping their tips cannot be legal. The tips are the stupid justification for paying waitstaff sub-minimum, after all.
