Iron Skillet Pizza
The Ultimate Deep Dish Pan Pizza
Like most folks, we love pizza in our house. We prefer to make our own, so we can control the toppings, the thickness of the crust, the amount of sauce, etc. Sometimes, we want calzones. Usually though, we want a thin crust, like the standard hand-tossed crusts. My partner is very good at forming this one. Full disclosure: He was a pizza cook for a highly popular Greek pizza restaurant when we lived in Missouri.
However, there are times when we’re in the mood for something a bit more decadant… something like the ultimate deep dish pan pizza. To begin, you will need a properly seasoned 12-inch cast iron skillet. There’s just no better pan, in my estimation, for making this kind of pizza. I learned the technique way back in my youth, at Girl Scout camp.
Yes reader, this is an adaptation of a campfire pizza. But, you won’t need a campfire or that heavy, unweildy cast iron lid you need to have to turn the skillet into a mini pizza-oven over the fire. It’s also not nearly as tricky to preheat the skillet at home as it is over the campfire. All you need to proceed is a well seasoned, 2 1/2-inch deep, 12-inch cast iron skillet and bog-standard oven.
