Meat is still favored in our house. But, we already include all these options in combination with less meat in our diets.
In fact, I have 10 single-serve containers of my vegetable-barley and beef soup in the freezer right now; there's twice as much barley and garbonzo beans than meat. In the big soup pot, there was a pound of beef, two cups of pearled barley, and three cups of cooked garbonzo beans, and veg. Plus, when I made the soup, I included six cups of fresh spinach and a handful parsley as well; which, I'm sure you know, wilted down to about a cup or so cooked.
One of my son's favorite dishes is tofu green bean stirfry with mushrooms. Another is my vegetarian ramen, made with tofu. I have the broth for that in the freezer too. I have a snack of hummus and celery stalks in the fridge for him at the moment as well.
My husband adores avacados. And, I ONLY keep brown rice in the house. As my husband is Persian, we eat a lot of rice dishes; so brown rice is a staple.
