Persian Recipe: Ghormeh Sabzi
This is one of my favorite Persian dishes

INGREDIENTS:
- Two packages frozen chopped spinach
- 1 bunch curly parsley
- 1 bunch cilantro
- 2 leeks or 2 bunches green onion
- 1 medium onion, chopped
- 4 to 6 large cloves of garlic, minced
- 3 tsp Advieh (Get it at your local Middle Eastern Store)
- A bit of crushed red pepper
- Salt
- Pepper
- 2 limes
- 1/4 tsp crushed saffron
- EVOO¹
- 3 tbs butter
- 1 can dark red kidney beans, drained
- 5 cups water
- 2 cups brown rice
- 2 to 3 lbs chuck, cut into 1-inch pieces²
- 1 tbs Better Than Bullion Beef Soup Base³
DIRECTIONS:
BEGIN WITH THE RICE: First thing in the morning, place your saffron threads in a bowl and use the back of a spoon to crush it. Add to the rice pot. Put two cups of brown rice in 4 1/4 cup water. Add 1 tsp salt and 2 tbs butter in the pot and cover with a…
