Persian Recipe: Ghormeh Sabzi

This is one of my favorite Persian dishes

INGREDIENTS:

  • Two packages frozen chopped spinach
  • 1 bunch curly parsley
  • 1 bunch cilantro
  • 2 leeks or 2 bunches green onion
  • 1 medium onion, chopped
  • 4 to 6 large cloves of garlic, minced
  • 3 tsp Advieh (Get it at your local Middle Eastern Store)
  • A bit of crushed red pepper
  • Salt
  • Pepper
  • 2 limes
  • 1/4 tsp crushed saffron
  • EVOO¹
  • 3 tbs butter
  • 1 can dark red kidney beans, drained
  • 5 cups water
  • 2 cups brown rice
  • 2 to 3 lbs chuck, cut into 1-inch pieces²
  • 1 tbs Better Than Bullion Beef Soup Base³

DIRECTIONS:
