Well… in America, something will always be open because there is always a group out of the main that makes it profitable. Christmas isn't a Jewish tradition; neither is it Hindu, Sikh, Muslim, etc. It's not particularly a Chinese tradition either. Why should their lives stop because of traditions that are not theirs?
Plus, a lot of people don't have family and friends with whom they can celebrate. There are a lot of people who will be alone for the holiday. They also take advantage of businesses and activities open then.
I bet you'd find, in urban areas at least, that there are theaters and restaurants, etc open for these kinds of groups.
