Yeah, it is very Persian to use thighs. My husband always complains when I use breast meat in stuff. I prefer breastmeat in most things, especially soups and stews. But, thighs are more flavorful with the yoghurt marinade; breast meat can get a little lost in the blend of spices and yoghurt.
And yes, varieties of torshi are a must at Persian gatherings. I'm not up to making labineh and it's rarely available even in Middle Eastern grocery stores; but my husband pines for it – especially with breakfasts. But, we always have feta in the house. Greens are a must with everything. The first time I ever saw anyone eat straight raw parsley was when my husband ate the garnish off a fish dish in a restaurant. I'd cooked with, but it honestly never occurs to me to eat the raw parsley. My preferred greens is spinach. I'll put baby spinach on or in just about anything; it's my go-to for sandwiches and wraps.
BTW, the correct spelling, according to my Persian recipe books written by Persians, is "mast-o-khiar." The article "su" is used more commonly in su'e estefâde meaning misuse, or su'e estefâde meaning mishandling.
